Ingredientes

  • 2 c. Corn meal
  • 1/2 tsp Soda
  • 1/4 tsp Salt
  • 1 c. Buttermilk
  • 1 c. Cracklings, diced (see below)

Direcciones

  1. Sift corn meal, salt and soda together. Add in lowfat milk and stir in cracklings.
  2. Form into oblong cakes and place on greased baking sheets. Bake, warm, for 30 min.
  3. CRACKLINGS: Cut fat back into thin 1-1/2 inch squares. Fry in deep fat till they are curled and golden. Drain cracklings on absorbent paper. Serve hot or possibly cool or possibly use for crackling bread.
