Receta Cranberry and Sweet Potato Casserole
Are you looking for a change?.... A change from the usual Marshmallow Topped Sweet Potato Bake served for Thanksgiving Dinner? Then try something different and make this delicious Cranberry and Sweet Potato Casserole! I am not a fan of the super sweet, marshmallow topped, pineapple and sweet potato casserole, you find on most Thanksgiving Day tables. I love sweet potatoes. I love the flavor of sweet potatoes. I eat sweet potatoes the same way I eat a baked potato. I love marshmallows and I love pineapple but not mixed with my sweet potatoes:) This recipe pairs sweet potatoes with that popular tiny, tart, bouncy berry~ The cranberry. Together, the two compliment each other perfectly in this recipe. The added brown sugar and raisins add a nice sweetness to the tart cranberry and the pecans add a nice crunch. If you want to try something different, give this recipe a try.....you won't be disappointed! I have a suggestion, you can do what my family does....I make both and we have a vote. You can make the Marshmallow Sweet Potato dish, or whatever dish you usually make and then make this recipe for Cranberry and Sweet Potato casserole....let your family and guests decide which one they like best:) You might be surprised which one gets the most votes!
- 4-6 sweet potatoes, peeled and sliced
- 1 1/2 cups fresh cranberries
- 1/2 cup golden raisins
- 3 T butter, melted
- 1/4 brown sugar
- 1 t ground cinnamon
- 1/2 t pumpkin pie spice
- 1/8 t salt
- 1 T orange zest
- juice from orange
- 1/4 cup cranberry juice
- 1/3 cup chopped, toasted pecans
Combine sweet potatoes, cranberries, raisins, and melted butter, toss to coat. Combine sugar, cinnamon, pumpkin pie spice, salt and orange zest. Add sugar mixture to sweet potato mixture; toss gently to coat. Spoon sweet potato mixture into a 2-quart casserole. Pour juices over mixture. Cover; bake in a 350 degree oven for 45 minutes, remove cover and stir in pecans, cover and bake 15 minutes longer or until potatoes are tender. Enjoy~
