I have to say that just about anything using cranberries is SO easy! And this recipe surely fits in that category! You could leave this super chunky, or you can do what I did, which was to buzz it a few times with my immersion blender, chunky just isn’t my style…
Cranberry Applesauce
Ingredients:
- 1 cup apple cider
- 1/2 cup sugar
- 3 apples- peeled, cored and chopped into little chunks
- 1 teaspoon cinnamon
- 12 ounces fresh cranberries
- 1 teaspoon apple cider vinegar
Directions:
In medium saucepan, add apple cider, sugar, apples and cinnamon. Bring to a boil, stirring until sugar is dissolved. Add the cranberries, turn down to a simmer and cook for about 10-12 minutes until berries burst and the sauce begins to thicken.
Stir in the vinegar. Refrigerate for at least 2 hours, this will help it thicken. At this point you can blend with an immersion blender for a smooth applesauce. You could also remove half and only blend half then add back in the rest so it is chunkier.
