Ingredientes

  • 4 c. fresh or possibly frzn cranberries
  • 3/4 c. sugar (1/4 c. + 1/2 c.)
  • 1/2 c. whipping cream
  • 1/2 c. dry breadcrumbs
  • 1 c. grnd almonds
  • 2 x Large eggs
  • 1 tsp lime zest
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 c. apricot jam, heated

Direcciones

  1. Preheat oven to 400 F. Toss cranberries with 1/4 c. sugar. Pour 1/2 c. of cranberries into 8 ramekins and place on a baking sheet.
  2. In a food processor, blend remaining ingredients till smooth. Pour over cranberries and bake for 30 to 40 min, till top of gratin is an even golden colour.
  3. Serve clafoutis hot, brushed with apricot jam.
