%20came%20to%20the%20rescue!%3C/p%3E%3Cp%3EI%20chose%20to%20make%20this%20cranberry%20nut%20loaf%20because%20it%20sounded%20pretty%20simple,%20and%20something%20I%20would%20eat%20as%20well.%20I%20looked%20at%20the%20ingredients,%20and%20it%20was%20definitely%20something%20I%20would%20normally%20make!%3C/p%3E%3Cp%3EAt%20first,%20the%20recipe%20didn%E2%80%99t%20mention%20what%20kind%20of%20cranberries%20to%20use%20(dried%20or%20fresh).%20I%20ended%20up%20using%20fresh%20because%20I%20guess%20that%E2%80%99s%20the%20point%20of%20the%20book%E2%80%A6use%20fresh!%20I%20didn%E2%80%99t%20have%20any%20trouble%20making%20this%20except%20for%20some%20runaway%20cranberries%20while%20trying%20to%20chop%20them.%20Have%20you%20ever%20tried%20to%20coarsely%20chop%20cranberries?%20I%20ended%20up%20pulsing%20it%20a%20few%20times%20in%20my%20food%20processor.%20I%20also%20wasn%E2%80%99t%20too%20clear%20when%20the%20directions%20called%20for%202%20TBSP%20grated%20orange%20peel.%20I%20assumed%20the%20zest%20of%20an%20orange%E2%80%A6so%20that%E2%80%99s%20what%20I%20did.%3C/p%3E%3Cp%3ECranberry%20Nut%20Loaf%3C/p%3E%3Cp%3Eadapted%20from:%20Simply%20in%20Season%3C/p%3E%3Cp%3Eingredients:%3C/p%3E%3Cp%3Edirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0F.%20Grease%20a%209x5%20loaf%20pan.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20sift%20together%20dry%20ingredients:%20flour%20through%20salt.%20Set%20aside%3C/p%3E%3Cp%3EIn%20another%20bowl,%20mix%20together%20wet%20ingredients:%20egg%20through%20vanilla,%20until%20combined.%20Add%20dry%20ingredients%20to%20wet.%3C/p%3E%3Cp%3EFold%20in%20cranberries%20and%20half%20the%20nuts.%20Pour%20batter%20in%20the%20prepared%20pan.%20Top%20with%20remaining%20nuts.%20Bake%20in%20preheated%20oven%20for%2055-60%20minutes,%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%3C/p%3E%3Cp%3ELet%20cool%20in%20pan%20on%20a%20wire%20rack%20for%2010%20minutes.%20Invert%20and%20remove%20from%20pan,%20allow%20to%20cool%20completely%20before%20slicing.%3C/p%3E%3Cp%3EGary%20was%20upset%20when%20I%20mentioned%20I%20was%20going%20to%20bring%20this%20to%20work%E2%80%A6so%20we%20ended%20up%20eating%20this%20ourselves.%20We%20ended%20up%20eating%20almost%20half%20the%20loaf%20ourselves.%20The%20flax%20meal%20made%20this%20very%20filling,%20and%20we%20ended%20up%20spoiling%20our%20dinners%20that%20way.%20Needless%20to%20say,%20this%20was%20a%20hit!%3C/p%3E%3Cp%3EI%20think%20next%20time%20for%20portion%20control,%20I%20will%20try%20making%20this%20in%20muffin%20form.%3C/p%3E){kind=link}
