Ingredientes

  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tablespoons grated orange peel
  • 2 cups whole wheat pastry flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup coarsely chopped cranberries
  • 1/2 cup chopped walnuts

Direcciones

  1. Heat oven to 400 degrees. Grease a 12-cup medium muffin pan very well, or line with paper baking cups.
  2. In large bowl, beat milk, oil, egg and orange peel with wire whisk until well mixed.
  3. In medium-size bowl stir together flour, sugar, baking powder and salt.
  4. Add flour mixture all at once to milk mixture and stir just until flour is moistened.
  5. Fold in cranberries and walnuts. Divide batter evenly among muffin cups.
  6. Bake 15-20 minutes or until golden brown.
