Receta Craving Cake?

So hubby is out of town. Out of the country in fact - on a business trip in Japan. And, as seems to be the case every time he goes out of town for an extended period, I promise myself that I will eat healthily...only to find that I get bored, don't want to go to the store, don't feel like cooking for one, etc. This never used to happen when I lived alone; then I could happily eat veggie stir fry and tofu every evening. Now, I crave junk. Most of the time I avoid it, but there are times when I'm less disciplined, which is how I found myself craving cake.

Craving cake leads to the obvious problem. Bake a cake. Eat the cake. That's a lot of cake for one person. But sometimes the craving is just too much.

But I don't wanna go to the store!!!

Hence this cake, inspired by a lazy hermit-like unwillingness to drive to the store and buy ingredients, a desire for something sweet, and a realization that I'm going to be stocking up at the orchard this weekend and using my favorite apple gadget, so I should use up my remaining apple pie filling that I canned last fall. And is that some caramel sauce in the fridge?

Craven Caramel Apple Cake

Ingredients

1 package cake mix

Since we're being lazy, we're using cake mix. (I typically keep one in the kitchen for cake emergencies); I had vanilla mix on hand which is ok. Lemon or spice cake mix would probably be better.

In a bowl, mix the cake mix, eggs, and apple pie filling.

Pour into a greased 9x13 cake tin.

Drizzle some caramel sauce over the mix.

Combine the brown sugar, flour, cinnamon, and nutmeg. Sprinkle over the top of the cake.

Place in a preheated oven (350F). Bake for 35-40 minutes.

And in case you're wondering, no I have not eaten the entire thing! I ate a piece for supper, and a piece for breakfast. The rest is in the freezer, safe for hubby's return.
