Ingredientes

  • 1/4 lb crawfish tail meat
  • 1/2 gal Lobster Stock - (see recipe)
  • 1/2 lb butter Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. In a large saucepan reduce Lobster Stock till it becomes a syrup, and cold. Chop crawfish tail meat. Place all ingredients in a cuisinart and puree. Season to taste with salt and pepper.
  2. Transfer this butter mix into a container and refrigeratetill ready to use.
  3. This recipe yields 3/4 lb..
  4. Yield: 3/4 lb.
