Crawfish Corn Chowder

Ingredientes

  • 2 c. minced celery
  • 2 c. minced onion
  • 1/2 c. (1 stick) butter
  • 4 c. whole-kernel corn
  • 3 c. diced potatoes
  • 1 lb crawfish tails with fat
  • 1/4 c. minced parsley
  • 2 c. chicken stock
  • 2 quart lowfat milk
  • 1 c. heavy cream
  • 1/4 c. sherry Salt to taste White pepper to taste
  • 2 c. white wash (1 c. flour dissolved in 1 c. water)

Direcciones

  1. In a medium pot, saute/fry the celery and onion in the butter till the onions are opaque. Then add in the corn, potato, crawfish, parsley and chicken stock. Boil till the potatoes are tender, about 10 min.
  2. Add in the lowfat milk, cream and sherry. Season with salt and white pepper. Blend in the white wash and cook over medium heat till thickened and no flour taste remains, about 10 min.
  3. Makes 6-8 servings.
