Ingredientes

  • 2 lb Cooked peeled crayfish, coarsely minced
  • 1 Tbsp. Cajun seasoning
  • 1/2 c. Reduced-calorie mayonnaise
  • 1/3 c. Egg substitute
  • 2 Tbsp. Worcestershire sauce
  • 2 c. Fresh breadcrumbs Vegetable cooking spray Cardinale Sauce Lemon wedges, (optional) Flat-leaf parsley sprigs, (optional)
  • 1 whl crayfish, (optional)
  • 1/4 c. Dry white wine
  • 1/4 c. Tomato paste
  • 1/4 c. Water
  • 2 Tbsp. Cornstarch
  • 12 ounce Evaporated skimmed lowfat milk, (1 can)
  • 2 tsp Extra virgin olive oil
  • 1/2 c. Minced onion
  • 1/4 c. Minced green bell pepper
  • 1/4 c. Minced green onions
  • 2 Tbsp. Minced fresh parsley
  • 1/2 tsp Grnd red pepper
  • 1/4 tsp White pepper
  • 2 x Cloves garlic, chopped
  • 1 lb Cooked peeled crayfish

Direcciones

  1. INSTRUCTIONS FOR Crayfish Cakes with Cardinale: Combine first 2 ingredients; toss well. Add in mayonnaise, egg substitute, and Worcestershire sauce; stir. Stir in breadcrumbs.
  2. Divide mix into 16 portions, shaping each into a 1/2-inch-thick patty.
  3. Coat a nonstick skillet with cooking spray; place over medium heat till warm. Add in 6 patties; cook 3 min. Turn patties over; cook 3 min or possibly till golden brown.
  4. Remove patties from pan; set aside, and keep hot. Repeat procedure with remaining patties.
  5. Yield: 8 servings (serving size: 2 patties and 1/2 c. sauce).
  6. INSTRUCTIONS FOR Cardinale Sauce: Combine first 5 ingredients; stir and set aside.
  7. Heat oil in a nonstick skillet over medium heat. Add in onion and bell pepper; saute/fry till tender. Add in green onions and next 5 ingredients (green onions through crayfish); cook 1 minute. Add in wine mix; bring to a boil, and cook 1 minute, stirring constantly.
  8. Yield: 4 c. (serving size:1/2 c.).
  9. Serving Ideas : Garnish with lemon, parsley, and crayfish.
