Receta Crazy Coconut Ice Cream
Rich and delicious!!! This is one of my favorites ice kreme recipes and goes great with my Fabulous and Fudgey Gourmet Brownies.
Crazy Coconut Ice Cream
- 2 cups young Thai coconut flesh, or shredded coconut
- 2 cups coconut water, or filtered water
- 2 dates, pitted and chopped
- 3/4 cup cashews
- 2 Tbsp coconut oil
- 2 Tbsp agave, honey or yacon syrup (to taste)
- 1/2 tsp lucuma powder (optional)
- pinch Bourbon Vanilla Bean powder (or vanilla extract)
- 2 drops Medicine Flower Coconut Extract (opt - but makes a really nice difference)
- pinch sea salt
- cacao chips for garnish
- shredded coconut for garnish
In a high speed blender, blend coconut and coconut water.
Add dates and cashews and blend until smooth.
Add coconut oil, agave, lacuma, vanilla powder and salt. Mix until creamy.
Run through an ice cream maker as directed, or pour into a glass bowl and freeze and mix
well every 2-3 hours until firm.
Serve with shredded coconut, cacao chips, maple syrup, etc.
