Receta Cream Filled Valentine Cupcakes
Today my daughter and I are taking a road trip to Trader Joe's in Milwaukee WI.
I can't wait...I need to do some major stocking up!
It's been a few months since our last road trip

Before I can leave on our road trip
I have to make my Grand-kids some cupcakes:)
I certainly can't go over to their house empty handed......
One reason I always have a box of cake mix,
a can of frosting and sprinkles in my house:)
Boy, Do they love Cupcakes!!
When I open the door, they run and yell "It's Grandma!!"
And I say, "Hi, It's me Grandma!"
Then they yell, "What did you bring us Grandma!"
And I say, "I've got a surprise for you!"
I show them what I brought.....
Lots of Ooh's and Aah's...
"Sit down at the table and Grandma will give you a cupcake"
They run to the table...
"Ok Grandma!!"
I pass out the goodies...
More Ooh's and Aah's....
"Yummy!!.....Thank you Grandma"

Today I'm bringing Cream Filled Valentine Cupcakes
Frosted and decorated with Valentine candies and sprinkles.
These delicious cupcakes start with a packaged cake mix
Then filled with a homemade cream filling
This cream filling is fast and easy to whip up
The cream filling tastes very close to the cream filling in Ho Ho's
And who doesn't like Ho ho's!!
Top these cream filled cupcakes with a canned frosting
Then decorate with some sprinkles and candies...
Nice and Easy Peasy~
Cupcakes~
- 1 box (15 oz) Pillsbury Valentine's Funfetti Cake Mix
- Whole egg~
- 1 cup water
- 1/2 cup oil
- 3 eggs
- or
- Egg White~
- 1-1/4 cups water
- 1/2 cup oil
- 4 egg whites
- 24 cupcake liners, (white and pink)
- Set oven to 350
- Place paper cupcake liners into 2 cupcake pans
- Each pan should make 12 cupcakes
- Combine cake mix, water, oil and eggs in large bowl
- Mix until moistened
- Beat with mixer on medium speed for 2 minutes
- Pour batter into paper liners with a large spoon
- Fill 1/2 full
- Bake at 350 degrees
- For 19 to 23 minutes
- Remove cupcakes from pan
- Cool completely on wire racks
- Fill with cream filling~
- Cream Filling~
- 1/2 cup milk
- 2 T flour
- 1/2 cup vegetable shortening
- 1/2 cup sugar
- 1/2 t vanilla
- 1/2 cup powdered sugar
- In a small saucepan, whisk flour into milk until there aren't any lumps
- Heat milk and flour on medium low heat
- Stirring constantly until mixture thickens to a gravy like consistency
- Spoon mixture from hot pan into a small bowl
- Cover with saran wrap
- Allow to cool to room temperature
- In a mixing bowl, cream shortening and sugar about 5 minutes
- Add cooled milk-flour mixture
- Beat until fluffy and sugar is dissolved completely
- About 5 minutes
- Be sure to beat until the grains of sugar are dissolved
- If in doubt, whip more
- Add vanilla and powdered sugar
Beat well
Once cupcakes are fully cooled
Place filling in a frosting bag with a star tip (#18)
Press the tip down into the middle of each cupcake
Give a good squeeze to the bag
Enough to cause the top of the cupcake to rise
But not enough to cause it to crack
No worries if it does crack,
The frosting will cover it up!

1 can (15 oz) Pillsbury Valentine's Funfetti Vanilla Frosting with Sprinkles
Cherry flavored ju ju hearts
Valentine M & M candies
Frost cream filled cupcakes with frosting
Sprinkle frosted cupcakes with sprinkles
Decorate with ju ju hearts and m & m candies
