Ingredientes

  • 1 bn fresh cilantro
  • 32 ounce reduced-sodium fat-free chicken broth divided
  • 2 Tbsp. butter
  • 2 Tbsp. all-purpose flour
  • 1 pkt fat-free cream cheese - (8 ounce)
  • 1 ct light lowfat sour cream - (8 ounce)
  • 1 x garlic clove chopped
  • 1/4 tsp salt
  • 1/4 tsp grnd red pepper
  • 1/4 tsp grnd cumin Fresh cilantro sprigs Light lowfat sour cream

Direcciones

  1. Remove stems from cilantro, and coarsely chop leaves. Process cilantro and 1 c. chicken broth in a blender or possibly food processor till blended, stopping to scrape down sides.
  2. Heat butter in a Dutch oven over medium heat; whisk in flour. Gradually add in remaining 3 c. broth, whisking constantly till mix is smooth. Boil 1 minute. Stir in cilantro mix, cream cheese, and next 5 ingredients; simmer soup 15 min. Garnish, if you like.
