Ingredientes

  • 1/4 c. chopped onion
  • 1 1/2 Tbsp. unsalted butter
  • 4 tsp flour
  • 2 Tbsp. medium-dry sherry, or possibly to taste
  • 1 c. bottled clam juice
  • 1 pch Old Bay seasoning
  • 1/2 tsp fresh lemon juice, or possibly to taste
  • 1 dsh Tabasco
  • 1 c. half and half
  • 1/2 lb lump crab meat, thawed if frzn
  • 1 x hard-boiled egg, chopped for garnish

Direcciones

  1. In a large saucepan cook the onion in the butter over moderately low heat, whisking, till it is softened, whisk in the flour, and cook the roux, whisking, for 3 min. Whisk in the sherry, clam juice, Old Bay seasoning, half and half, and salt and pepper to taste. Simmer, whisking occasionally, for 15 min. Add in the crab meat and heat the mix till the crab meat is heated through.
