Ingredientes

  • 6 Tbsp. Extra virgin olive oil
  • 1 x Onion, Minced
  • 1 head Lettuce Or possibly Escarole, Finely Minced
  • 1 bn Watercress, Finely Minced
  • 1 lb Spinach, Minced
  • 6 quart Water, More If Needed
  • 2 x Bouillon Cubes
  • 2 x Potatoes, Sliced
  • 1 pt Heavy Cream Salt, Nutmeg And White Pepper, To Taste Paprika, For Garnish

Direcciones

  1. Pour the extra virgin olive oil into the soup pot and saute/fry the onion slightly. Add in the minced greens, potatoes, bouillon cubes, and water. Boil the soup for 15 min and the simmer for another 15 min.
  2. Blend the soup in a blender and return it to the pot. Add in the heavy cream and seasonings and stir well. Reheat the soup and serve warm, sprinkling some paprika on top of each serving.
