Ingredientes

  • 1 c. Onion, minced
  • 2 Tbsp. Butter, melted
  • 2 can Chicken broth, diluted
  • 16 ounce Can mashed pumpkin, cooked
  • 1 tsp Salt
  • 1/4 tsp Grnd cinnamon
  • 1/8 tsp Grnd ginger
  • 1/8 tsp Pepper
  • 1 c. Whipping cream
  • 3 Tbsp. Butter, softened
  • 1 Tbsp. Brown sugar
  • 1/4 tsp Grnd cinnamon
  • 4 slc whole wheat bread

Direcciones

  1. Saute/fry onion in butter in a med. saucepan till tender. Add in 1 can chicken broth; stir well. Bring to a boil; cover, reduce heat, and simmer 15 minutes.
  2. Pour broth mix into container of blender and process til smooth. Return mix to saucepan. Add in remaining can of broth, pumpkin, and next 4 ingredients; stir well. Bring to a boil; cover, reduce heat, and simmer 10 min. Stir occasionally. Stir in cream, and cook till thoroughly heated
  3. (don't boil). Ladle into individual soup bowls. Top each serving with Cinnamon Croutons.
  4. Yield: 6 c. FOR CINNAMON CROUTONS: Combine butter, brown sugar, and cinnamon; stir well. Spread butter mix proportionately over one side of bread slices. Place bread, buttered side up, on a baking sheet.
  5. Bake at 400 for 8-10 minutes. or possibly till bread is crisp and topping is bubbly.
  6. Cut each slice of bread into 8 small triangles or possibly squares.
  7. Yield: 32croutons.
