The year that was gone by perhaps the worst ever in my life but I have learned to pick up the pieces and move forward. Belief that comes from within that things will improve soon, it can’t rain forever, the seasons will change. Rebuilding my faith in life piece by piece, with more enthusiasm and rejuvenation I am here to take you through my new resolutions in food and life.
For most part of the year I will try to stay unprocessed. That would mean I will not consume any processed food. For country like India this is difficult, so many our daily staples are processed food but as of now I have ticked out the junk foods including soda, colas and fries, other includes cheese (processed slices), sugar, salt, refined flour and oils. In addition to this I am slowly shifting towards organic foods. Being organic in India is again difficult primarily due to absence of stable supplies of organic foods and the food labeling.
This year we are looking forward to more healthy and wholesome food, like wholesome salad lunches, warm stews and soups and more emphasise will be on eating good food with right nutrient profile. That would certainly left out the desserts which so far you have seen was my greatest weakness, so efforts will be on to make some tasty and healthy desserts. But there will be exceptions like life itself. There will be few sinful desserts and indulgences, once in a while. Believe me you need to do that to cut the monotony, to appreciate the goodness of healthy grains which at first may not sound appetising to you.
We will reveal our plan slowly as life permits and in hope of some shining days ahead, here we present this cream of red bell pepper soup.

Red bell peppers : 2 Butter : 1 tbsp Onion (finely chopped) : 1 Fresh rosemary : one sprig Vegetable stock (homemade) / water : 3 cups Tomato puree (optional) : 2 tbsp Low fat cream : ¼ cup Paprika : ½ tsp Salt and freshly ground pepper as per taste
Roast the bell peppers in oven or fire roast them over gas stove or pan roast the bell peppers. Once the skin is nicely charred, cover the peppers in palstic and let them sweat for 10 minutes. Peel the skin of the peppers, cut them into halve and remove the seeds, stalk and pith. Roughly chop them. In a saucepan, warm the butter. Add the onions and cook gently for five minutes till it become translucent. Add the rosemary, peppers and vegetable stock to the pot, bring it to rapid boil and then simmer it for another 15 minutes. Stir in the tomato puree and mix it well. Discard the rosemary and process the soup in a blender to smooth puree. Stir in the cream and season it with salt, black peppers and paprika. Serve the cream of red bell pepper soup warm with crusty breads on side. After removing the skin, do not rinse the peppers with water, as it will remove the natural oils and the flavours. 3.2.2885
