Ingredientes

  • Vegetable Oil 1/2 cup
  • Mirepoix:
  • Onions 4 cups Peel & Dice
  • Leeks 2 cups Wash, Trim, Split & Dice
  • Celery 2 cups Wash & Dice
  • Carrots 2 cups Wash, Peel & Dice
  • Roux 1 cup (or as needed)
  • Milk, warm 3 gal Heat in steamer
  • Water 1 gal
  • Vegetable Base 2 cups
  • Salt & White Pepper To taste
  • Nutmeg, Ground 3tsp.

Direcciones

  1. In hot tilt add mirepoix and sweat untill the onions translucent then set aside (can prep a day ahead). Puree vegetables in a food processor. Place water un tilt grill ass vegetable base. Then add roux to thicken. Add ouree vegetables the finish with warmed milk. Add nutmeg and salt & white pepper as needed.
