- Sweat the onions in half oil, half butter until soft.
- Add in coriander root, ginger and chilli and dust with the paprika. Add in half the sweetcorn, chicken stock and coconut lowfat milk. Simmer for 10 min.
- Liquidize and pass through a sieve. Add in the crabmeat to the remaining corn and spring onions.
- Adjust seasoning.
