Creamed Coconut Sweetcorn And Crab Soup

Ingredientes

  • 2 x Onions, peeled and minced
  • 1/2 dl Oil
  • 50 gm Butter
  • 40 gm Coriander root, minced
  • 1/2 Tbsp. Ginger, peeled and minced
  • 1/2 Tbsp. Chilli, seeded
  • 1 Tbsp. Paprika
  • 60 gm Sweetcorn, blanched
  • 6 dl Chicken stock
  • 1 dl Coconut cream
  • 640 gm White crab meat
  • 4 x Spring onions, finely minced Salt and pepper

Direcciones

  1. Sweat the onions in half oil, half butter until soft.
  2. Add in coriander root, ginger and chilli and dust with the paprika. Add in half the sweetcorn, chicken stock and coconut lowfat milk. Simmer for 10 min.
  3. Liquidize and pass through a sieve. Add in the crabmeat to the remaining corn and spring onions.
  4. Adjust seasoning.
