Ingredientes

  • 2 quart Water
  • 1 x Bay leaf
  • 4 x Grouse or possibly squab, 3/4 to 1 lb. each
  • 1/2 c. Onion, minced
  • 1/2 c. Fresh mushrooms, sliced
  • 2 Tbsp. Butter
  • 2 Tbsp. All-purpose flour
  • 1 c. Chicken broth
  • 2 Tbsp. Lemon juice
  • 1/2 tsp Salt
  • 1/8 tsp Pepper
  • 1/4 c. Whipping cream
  • 2 Tbsp. Fresh parsley, chopped Toast or possibly warm cooked rice

Direcciones

  1. In a dutch oven, bring water, bay leaf and grouse to a boil. Reduce heat; cover and simmer till meat is tender. Remove grouse; cold.
  2. Debone and cut into pcs. In a skillet over medium heat, saute/fry onions and musrooms in butter till tender. Add in flour. Stir in broth, lemon juice, salt and pepper; bring to a boil. Cook and stir for 2 min. Add in grouse and heat through. Add in cream and parsley; mix well. Heat through. Serve over toast or possibly rice.
