Creamed New Red Potatoes

Ingredientes

  • 8 new red potatoes
  • 1/2 c. diced onion
  • 1 tbsp. dry parsley
  • 1/2 teaspoon celery salt
  • 1/8 c. fresh parsley (opt.)
  • 1 stick butter
  • 1 c. lowfat sour cream
  • 1/4 teaspoon salt
  • 1 teaspoon pepper

Direcciones

  1. Scrub potatoes and dice into cubes. Place in saucepan and cover with water. Cover pan and bring to boil. Reduce heat and cook till tender, approximately 10 min. Add in diced onions when potatoes have boiled for 7 min. Don't overcook.
  2. Drain potatoes and onions. While potatoes and onions are draining, heat butter (in the pan you cooked the potatoes). Stir in lowfat sour cream.
  3. Return the potatoes and onions to the pan. Shake remaining seasonings over potatoes and toss till all ingredients are well mixed through potatoes. Garnish with fresh parsley (optional). Serve.
