I like chard.

But I don’t always love it.

It’s bitter… The bitterest green in my repertoire, and some days it seems more bitter than others.

Maybe it’s the hot weather we’ve been having. Heat can bring out the ‘bitter’ in greens (I think – I actually know nothing).

Most days I’m fine with that.

Some days I’m not.

The chard however, like the zucchini, must be picked when it’s ready, not when I’m ready.

The ‘cream’ sauce softened the bitter….. Besides, I love mustard!

Creamed Rainbow Chard

Ingredients:

Instructions:

Wash the chard and trim any bad bits. Stack the leaves together and fold over, the long way. Slice into thin strips, using both leaves and stems, but keeping the stems separate.

Heat oil in a large skillet. Add ham, onion, stems and sauté over medium heat until onion is tender.

Add the chard leaves and stir until the leaves soften and fit into the skillet.

Reduce heat, cover and let cook until chard has wilted, about 5 minutes.

Combine yogurt, mustard, paprika and salt.

Stir into chard, heat through and serve.

The heat wave is over.

Yesterday was miserably hot…. 36C (97F).

Today was perfect….. 27C (80F), partly cloudy with a light breeze.

And I did something I haven’t done all summer….

I puttered.

During the heat I kept up on all my chores – the hoeing and weeding and watering and tying and tending. But it was hot…. I didn’t do anything that wasn’t necessary and tried to stay out of the afternoon sun..

Today I just wandered around with my clippers and a basket.

I trimmed under the azalea, snipped the spent blooms off of the lilies and cut back the mint.

I trimmed the marjoram and the basil and the sage and the tarragon, tied the herbs into bundles and hung them to dry.

I sat in the middle of the lawn with the puppies girls and braided the onions.

Then I gave the girls belly rubs (they were soooo helpful).

It was all just….. pleasant.

Reminded me that I actually love summer.
