%20This%20is%20a%20dish%20that%20always%20reminds%20me%20of%20my%20mom,%20who%20loves%20it%20and%20often%20would%20make%20it%20for%20potluck%20Thanksgiving%20dinners%20when%20I%20was%20growing%20up.%3C/p%3E%3Cp%3EI%20had%20never%20attempted%20it%20but%20when%20I%20saw%20this%20wonderful-looking%20recipe%20from%20Deb%20at%20Smitten%20Kitchen%20last%20month,%20I%20made%20a%20mental%20note%20to%20try%20it%20soon.%20Unfortunately,%20since%20my%20son%20was%20born%20in%20the%20spring,%20my%20mental%20notes%20are%20no%20longer%20very%20reliable%20so%20it's%20taken%20me%20a%20while%20to%20get%20around%20to%20it.%3C/p%3E%3Cp%3EBut%20my%20procrastination%20turned%20out%20to%20be%20perfect%20timing%20as%20we've%20just%20begun%20receiving%20bunches%20of%20delicious%20(if%20incredibly%20muddy)%20spinach%20in%20our%20produce%20box%20from%20Eatwell%20Farm.%20I%20made%20a%20point%20of%20washing%20the%20leaves%20earlier%20(triple%20wash%20does%20not%20cut%20it%20with%20this%20stuff,%20it%20calls%20for%20quintuple%20wash)%20in%20the%20day%20to%20make%20it%20a%20little%20easier%20to%20pull%20this%20dish%20off%20in%20the%20chaos%20that%20fills%20our%20house%20during%20our%20little%20son's%20bedtime%20routine.I'm%20pleased%20to%20report%20that%20it's%20actually%20very%20simple%20and%20easy%20to%20make%20(I%20tend%20to%20assume%20that%20anything%20that%20requires%20a%20roux%20is%20inherently%20complicated%20because%20it%20sounds%20so%20French%20but%20this%20is%20not%20actually%20the%20case.)%20And%20better%20still,%20it%20is%20COMPLETELY%20DELICIOUS!!!%3C/p%3E%3Cp%3EI%20can't%20really%20take%20any%20credit%20for%20this%20as%20it's%20a%20well-established%20fact%20that%20pretty%20much%20anything%20that%20includes%20heavy%20cream,%20butter,%20onions%20and%20garlic%20is%20bound%20to%20be%20delicious.%20But%20this%20creamed%20spinach%20really%20did%20have%20me%20reaching%20back%20into%20the%20bowl%20for%20seconds%20and%20then%20thirds%20and%20lovingly%20licking%20the%20wooden%20serving%20spoon%20after%20the%20meal.%3C/p%3E%3Cp%3EIt's%20creamy,%20sweet,%20fresh,%20and%20sinfully%20rich.%20Despite%20the%20fact%20that%20I%20just%20gave%20all%20the%20credit%20for%20how%20good%20this%20tastes%20to%20the%20heavy%20cream%20and%20the%20butter,%20I%20actually%20think%20that%20the%20spinach,%20itself,%20is%20what%20sets%20it%20above%20all%20other%20creamed%20spinach%20I've%20ever%20eaten.Although%20you%20can%20make%20this%20dish%20with%20frozen%20spinach,%20I%20strongly%20suggest%20that%20you%20use%20fresh,%20organic%20spinach,%20instead.%20It%20just%20tastes%20much%20better%20and%20the%20texture%20is%20better,%20too.%3C/p%3E%3Cp%3ESo%20next%20time%20you%20feel%20like%20eating%20comfort%20food%20or%20need%20to%20gain%20some%20weight%20in%20a%20hurry,%20give%20this%20a%20try.%20I%20don't%20think%20you'll%20be%20disappointed.%3C/p%3E%3Cp%3ECreamed%20Spinach%3C/p%3E%3Cp%3EServes%206%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Wash%20your%20spinach%20well%20but%20no%20need%20to%20spin%20or%20pat%20it%20dry.%20Place%20spinach%20in%20a%20large%20pot%20over%20high%20heat.%20Cook,%20covered,%20with%20just%20the%20water%20clinging%20to%20leaves,%20stirring%20occasionally,%20until%20wilted,%20about%204%20to%206%20minutes%20(baby%20spinach%20will%20take%20less%20time%20than%20regular%20spinach%20but%20I'd%20use%20the%20grown%20up%20version%20if%20I%20were%20you.)%3C/p%3E%3Cp%3E2.%20Press%20or%20squeeze%20out%20the%20excess%20liquid%20any%20number%20of%20ways,%20either%20by%20putting%20it%20in%20a%20colander%20or%20mesh%20strainer%20and%20pressing%20the%20moisture%20out%20or%20letting%20it%20cool%20long%20enough%20to%20grab%20small%20handfuls%20and%20squeezing%20them%20to%20remove%20as%20much%20water%20as%20possible.%20Coarsely%20chop%20the%20wrung-out%20spinach.%20Wipe%20out%20large%20pot%20so%20you%20can%20use%20it%20again.%3C/p%3E%3Cp%3E3.%20Heat%20milk%20or%20cream%20in%20a%20small%20saucepan%20over%20moderate%20heat,%20stirring,%20until%20warm.%20Keep%20warm.%20Meanwhile,%20cook%20onion%20and%20garlic,%20if%20using,%20in%20butter%20in%20your%20wiped-out%20large%20pot%20over%20moderately%20low%20heat,%20stirring%20occasionally,%20until%20softened,%20about%20six%20minutes.%20Whisk%20in%20flour%20and%20cook%20roux,%20whisking,%20about%20three%20minutes.%20Add%20warm%20milk%20or%20cream%20in%20a%20slow%20stream,%20whisking%20constantly%20to%20prevent%20lumps,%20and%20simmer,%20whisking,%20until%20thickened,%20three%20to%20four%20minutes.%20Stir%20in%20nutmeg,%20spinach,%20and%20salt%20and%20pepper%20to%20taste%20and%20cook,%20stirring,%20until%20heated%20through.%3C/p%3E%3Cp%3EA%20few%20more%20recipes%20you%20might%20like:%3C/p%3E){kind=link}
