Creamy Cajun Pasta

Lightened up Creamy Chicken Pasta with a Kick

Ingredientes

  • 1 pound boneless skinless chicken breast, cut into small pieces
  • 1 Tbls olive oil
  • 1/4 cup onion, minced
  • 2 garlic cloves, minced
  • 2 tsp Cajun seasoning
  • 1 cup tomatoes, diced
  • 1/3 cup half and half
  • 8 oz Spaghetti

Direcciones

  1. Cook pasta according to package directions.
  2. Heat a large skillet over medium high heat. Add olive oil, swirl to coat the pan. Add chicken and 1 tsp Cajun seasoning. Cook until chicken is cooked through, about 6 minutes depending on how big the pieces are. Remove chicken from the pan, cover to keep warm.
  3. Add onion and garlic to the hot pan. Saute until the onion is tender. Add tomatoes, half and half, and 1 tsp Cajun seasoning. Bring to a slow boil, stirring frequently and cook for a couple minutes. Add chicken back to the pan. Stir in pasta, and toss to combine. Top with Parmesan cheese, if desired.
