Creamy Cauliflower And Cheese Soup

Ingredientes

  • 3 c. Water
  • 1 med Onion, minced fine
  • 2 tsp Basil
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 3 c. cauliflower florets, cut to uniform size
  • 2 Tbsp. Butter
  • 2 Tbsp. Flour
  • 1 c. Warm chicken stock
  • 2 c. Lowfat milk
  • 1/4 lb Cheddar cheese, cut into small pcs

Direcciones

  1. In a heavy 4 quart kettle, cook water, onion, basil, salt, and pepper covered for 5 min over medium heat. Add in cauliflower. Cover and cook till cauliflower is soft, about 15 min. In a medium saucepan, heat butter. Add in flour and mix till none of the flour remains white. Slowly add in warm stock. Stir with whisk till smooth. Pour into soup and mix well. In saucepan, heat lowfat milk.
  2. Add in cheese and stir over low heat till melted. Add in to soup. Mix well and heat till soup begins to steam.
  3. Yield: 6 Servings
