Creamy Chipped Beef
I know I tend not to post on the weekend, however, this is the exception. I was out running around picking up Christmas gifts and I came home to refuel. I had just been to our local specialty cheese shop and had picked up a pound of dried beef-thinly shaved. Hubby was starving and I needed some more energy to head back out so I threw this together and thought of you all. I know you are also running around this time of the year, so for a quick meal, you too can throw this together and get back out the door lickety split…
Creamy Chipped Beef
INGREDIENTS:
- 3 tablespoons butter
- 1/2 onion-diced
- 1 cup chipped beef-chopped
- 3 tablespoons flour
- 1 1/3 cups milk
- 2/3 cup petite sweet peas
- 2 teaspoons Worcestershire sauce
- Pepper, to taste ( don’t add salt, you’ll get enough from the beef and the Worcestershire)
Thick cut bread-toasted
DIRECTIONS:
In a medium saucepan, melt butter over medium heat. Add in the onion and cook for 3 minutes, add in the beef and cook and stir another 2 minutes. Sprinkle with the flour, cook and stir about 1 minute. Stir in the milk and cook until it starts to thicken, about 3 minutes. Add the peas, stir, then the Worcestershire and pepper. Turn off heat and let thicken another minute or so. Pour over the toasted bread and enjoy!
