Creamy Garlic Spinach Soup

Ingredientes

  • 1 lrg Bunch spinach, remove stalks
  • 4 c. Chicken broth
  • 2 lrg Carrots, grated
  • 1 lrg Onion, minced
  • 12 x Cloves fresh garlic, chopped
  • 1/2 c. Butter
  • 1/4 c. Flour
  • 1/2 c. Light cream
  • 1/2 c. Whipping cream Salt and pepper to taste Garlic croutons

Direcciones

  1. Chop spinach coarsely and combine with chicken broth and carrots in a 3-qt pot.
  2. Cook for 5-10 min, till carrots are tender and spinach wilted. Remove from heat.
  3. Meanwhile, saute/fry onion and garlic very gently over low to medium heat in butter, about 20 to 30 min, till onions are tender and translucent/soft, but garlic is not browned. Add in flour and cook, stirring constantly 5 - 10 min. Combine spinach mix with onion mix in food processor or possibly blender in small batches and puree till smooth.
  4. Clean pot and return soup to pot. Add in cream, whipping cream, salt, and pepper to taste.
  5. Heat till warm, but not boiling. Garnish with a dollop of lowfat sour cream and garlic croutons.
