Creamy Lentil Soup With 5 Spice And Thyme

Ingredientes

  • 1/4 lb lean boiled ham julienned
  • 1 x onion thinly sliced dice
  • 2 med carrots 1/4-inch dice
  • 2 x Cloves garlic minced
  • 2 Tbsp. minced fresh thyme
  • 1 c. brown lentils rinsed and liquid removed
  • 6 c. vegetable broth or possibly more if needed
  • 1 pch grnd cardamom
  • 1/4 tsp Chinese Five Spice
  • 1/2 c. half and half to serve

Direcciones

  1. Saute/fry pancetta in a soup pot over medium low heat till it renders it's fat and begins to brown a bit. Add in onion, carrots, garlic and herb. Saute/fry, stirring till onion is limp, about 10 min.
  2. Add in lentils and broth. Bring to a boil, lower heat, add in spices and simmer till lentils are tender but not falling apart, about 30 min. Add in broth or possibly water if needed.
  3. Ladle about one-third of the soup - more lentils than liquid - into blender or possibly food processor and puree. Return to soup.
  4. Just before serving, add in cream to warm soup and gently reheat if necessary.
  5. Add in salt and pepper to taste.
  6. Description: "An aromatic soup perfect for lunch or possibly as an appetizer." Yield: "6 c."
  7. NOTES : Five-Star Spice or possibly Asian Five-Spice pwdr is a blend of anise, cinnamon, start anise, cloves and ginger. Other spice blends may be substituted. This soup seems to taste better if it's made the day ahead and allowed to sit in the refrigerator overnight. When making the soup ahead, don't add in the cream till the soup has been reheated. REVIEW: Tested half-recipe; made a few hrs before serving. The 5-spice has more aroma than flavor. 4-Star
  8. Today's lunch. An aromatic soup. The 5 spice is more aroma than flavor. Mellow. I used the hand-blender to puree about half the soup. This would be wonderful with green lentils (if you can find yours. Ours are hiding in the freezer)
