Receta Creamy Mac and Cheese – Guilt Free!

Some foods really amaze me with their versatility, especially the foods that used to be boring ~ cauliflower anyone?
Since its revival over the past few years not only can you grill or roast cauliflower, it can easily be transformed into rice, pizza crust, whipped or mashed “potatoes” and it even makes a killer cream sauce.
Here is a recipe for Mac and Cheese that will satisfy your comfort food craving and You might just find yourself asking for a second helping. This recipe includes some dairy, but with a few tweaks it can easily be made dairy free. I pumped up the veggies to increase the good carbs and cut back on the pasta to reduce the refined carbs.
Enjoy! After all, we all have to have a little bit of comfort food in our life!
On a side note: the sauce alone makes a rich “cream sauce” for topping roasted asparagus.
Creamy Mac and Cheese – Guilt Free!
INGREDIENTS
Sauce
- 1 small head cauliflower or 1/2 of a large l broken into florets
- 1/4 cup milk - substitute your favorite nut milk for dairy free version
- 4 ounces of extra sharp cheddar cheese shredded; omit this for dairy free version
- 1/8 cup nutritional yeast - use 1/4 cup for dairy free version
- 3 cups of uncooked pasta
- 2 cups chopped broccoli or spinach
- ½ red or yellow bell pepper chopped
- 1 cup chopped cherry tomatoes
- 2 cloves chopped garlic
- 1 teaspoon lemon juice
INSTRUCTIONS
Bring a large pot of water to boil and cook the pasta according to package directions, drain and set aside
Add the florets to a large pot; cover with water, bring to a boil.
Cook for about 7-10 minutes until soft and drain.
While cauliflower is cooking, add the garlic, bell pepper and broccoli to a skillet and cook until vegetables begin to soften
Sprinkle lemon juice over vegetables and add to the pasta.
Place the cauliflower into a food processor, add milk and blend until smooth
Add the nutritional yeast, the cheddar cheese and blend until velvety smooth - you may have to add some water to achieve texture
Add the cauliflower sauce to the pasta & vegetable mixture and combine
Place all ingredients into an oven proof baking dish and sprinkle with cheddar cheese or nutritional yeast if desired and bake at 350 for 25 minutes until it begins to brown.
