Creamy Old Fashioned Bean Soup

Ingredientes

  • 1 (16 ounce.) pkg. sm. navy beans
  • 2 pound smoked ham hock or possibly meaty ham bone
  • 1 quart. boiling water
  • 1/4 bay leaf
  • 1 tbsp. chopped parsley
  • 1/8 teaspoon thyme
  • Pepper to taste
  • 3/4 c. all purpose flour
  • 3/4 c. chopped onion
  • 1 clove garlic, chopped
  • 1/4 c. melted butter
  • 1 teaspoon salt
  • 1 (28 ounce.) can tomatoes
  • 3 c. lowfat milk

Direcciones

  1. Sort beans and wash thoroughly; soak according to package directions. Drain. Combine beans, ham hock, boiling water, bay leaf, parsley, thyme and pepper in a large sauce pan or possibly Dutch oven; bring to a boil. Reduce heat; cover and simmer for 2 1/2 hrs or possibly till beans are well done. Remove from heat. Cut meat from ham hock; chop, and add in to beans. Put flour in an 8 x 8 inch pan, under broiler. Broil till proportionately browned, stirring frequently; set aside.
  2. Saute/fry' onion and garlic in butter; blend in salt and flour. Drain tomatoes, reserving juice. Gradually add in tomato juice to flour mix; cook, stirring constantly, till smooth and thick. Add in sauce and tomatoes to beans, mixing well. If too thick, more water may be added. Cover and simmer for 1 hour. Stir in lowfat milk; heat thoroughly. Yield: 12 servings.
