Creamy Potatoes with Tomato

Mashed potatoes get a colorful make over with the addition of chopped plum tomatoes and thinly sliced scallions. If you are making these ahead of time, hold off on stirring in the tomatoes and scallions until you have reheated the potatoes.

Ingredientes

  • 3 Lbs. Idaho Potatoes
  • 1 1/2 Cups Milk
  • 1 Cup Heavy Cream
  • 1/4 Cups Scallions, Sliced Diagonally
  • 2 Whole Plum Tomatoes, Seeded & Diced
  • 1/2 Tsp. Salt
  • 1/4 Tsp. Ground Black Pepper

Direcciones

  1. Preheat the oven to 350°F. Bake the potatoes for about 1 hour, or until tender.
  2. In a large saucepan, warm the milk and heavy cream. Halve the potatoes and scoop the flesh into the saucepan.
  3. Mash over low heat until creamy. Stir in the scallions and tomatoes and season with salt and pepper. Serve at once.
