I get it. Not everyone owns a pressure cooker. The word "pressure" scares the bejeebies out of you. You might still be remembering horror stories of your grandmother's pressure cooker explosion, and seeing spaghetti hanging off her kitchen ceiling, with splatters of red tomato sauce.
That was then. This is now. Over the years, pressure cookers have been improved, and even adapted as electric pressure cookers. In the 10+ years that I've owned both a stovetop model and my beloved 8-Quart electric pressure cooker*, I have never, EVER had anything close to an explosion!

,%20I%20can%20have%20dinner--%20or%20in%20this%20case--%20dessert%20%20ready%20to%20enjoy.%20%20How%20convenient%20is%20that?!%3C/p%3E%3Cp%3EI%20have%20loved%20rice%20pudding%20for%20as%20long%20as%20I%20can%20remember.%20%20If%20I%20had%20leftover%20white%20rice,%20I'd%20cook%20a%20package%20of%20vanilla%20pudding,%20add%20in%20the%20leftover%20rice,%20raisins%20and%20cinnamon.%20%20My%20husband%20was%20never%20interested%20in%20joining%20me.%20He'd%20say%20that%20he%20didn't%20like%20the%20texture.%20%20His%20loss,%20my%20gain.%3C/p%3E%3Cp%3ELast%20week,%20I%20had%20a%20serious%20craving%20for%20rice%20pudding.%20It%20was%20bordering%20%22obsessive%22.%20%20I%20looked%20at%20my%20pressure%20cooker,%20and%20I%20realized%20that%20I%20had%20the%20perfect%20solution%20right%20in%20front%20of%20me!%20%20I%20always%20keep%20a%20few%20boxes%20of%20Arborio%20rice%20in%20my%20pantry,%20so%20that%20I%20can%20make%20risotto.%20%20The%20starchiness%20of%20this%20rice%20is%20perfect%20for%20making%20rice%20pudding.%3C/p%3E%3Cp%3EI%20measured%20the%20rice,%20sugar%20and%20I%20added%20in%20a%20little%20cinnamon%20and%20a%20pinch%20of%20salt.%3C/p%3E%3Cp%3EThe%20last%20ingredient%20is%20whole%20milk.%20%20I%20clicked%20on%20the%20lid,%20set%20the%20timer%20to%2016%20minutes%20on%20high.%20On%20the%20stove%20top,%20you%20would%20use%20a%20pot,%20put%20on%20the%20lid%20and%20cook%20this%20for%20an%20hour.%3C/p%3E%3Cp%3ESIXTEEN%20MINUTES,%20folks!%20%20The%20rice%20was%20cooked%20to%20perfection!%3C/p%3E%3Cp%3EThe%20last%20three%20ingredients%20added%20are%20half%20&%20half%20and%20pure%20vanilla%20%20with%20two%20eggs%20whisked%20in...%3C/p%3E%3Cp%3ETurning%20the%20PC%20to%20the%20sear/brown%20mode,%20the%20mixture%20was%20brought%20to%20a%20boil%20and%20stirred,%20then%20turned%20off.%20%20I%20added%20one%20cup%20of%20golden%20raisins,%20which%20is%20optional.%20In%20our%20home,%20it's%20required!%3C/p%3E%3Cp%3EThere%20are%20two%20ways%20to%20enjoy%20rice%20pudding.%20Warm%20(my%20favorite%20way)%20or%20cold%20(not%20bad,%20but%20still%20doable).%3C/p%3E%3Cp%3EEither%20way,%20the%20best%20way%20of%20all%20to%20enjoy%20rice%20pudding%20is%20with%20a%20spoon!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20I'm%20not%20exaggerating%20when%20I%20say%20that%20this%20is%20the%20best%20rice%20pudding%20I've%20ever%20had!%20I%20ate%20this%20pudding,%20within%20moments%20of%20spooning%20it%20out%20of%20the%20pressure%20cooker.%20It%20was%20creamy,%20warm%20and%20comforting.%20%20I%20love%20cinnamon,%20but%20only%20just%20enough%20so%20that%20the%20vanilla%20custard%20of%20the%20pudding%20took%20center%20stage.%20%20I%20admit,%20that%20I%20ate%20both%20of%20these%20bowls,%20after%20photographing%20them.%20I%20felt%20no%20shame.%20I%20felt%20like%20a%20nagging%20scratch%20had%20been%20itched.%3C/p%3E%3Cp%3EAbout%20my%20husband:%20he%20enjoyed%20this%20rice%20pudding,%20as%20well.%20%20Arborio%20rice%20is%20a%20much%20shorter%20grain%20than%20traditional%20white%20rice.%20%20He%20also%20liked%20this,%20served%20warm.%20%20I%20didn't%20hear%20one%20complaint%20about%20%22texture%22.%20I%20do%20believe%20his%20is%20a%20rice%20pudding%20convert.%20My%20son,%20enjoyed%20this%20cold.%3C/p%3E%3Cp%3EI%20will%20add%20that,%20as%20the%20rice%20pudding%20cools,%20the%20creaminess%20begins%20to%20diminish%20and%20the%20pudding%20hardens.%20I%20discovered%20that%20if%20I%20spooned%20some%20hardened%20pudding%20into%20a%20bowl,%20added%20a%20splash%20of%20whole%20milk,%20and%20microwaved%20it%20for%20about%201%20minute%20that%20the%20pudding%20became%20creamy%20all%20over%20again.%3C/p%3E%3Cp%3EHomemade%20rice%20pudding,%20in%2016%20minutes!%20%20I%20could%20go%20on%20and%20on%20about%20the%20virtues%20of%20pressure%20cooking.%20I've%20shared%20my%2040-minute%20flavorful%20and%20tender%20Boeuf%20Bourguignon%20(Beef%20Burgundy)%20on%20my%20blog.%20%20%20On%20the%20stove/oven%20it%20takes%20about%203%20hours.%20%20What's%20not%20to%20love%20about%20pressure%20cooking?%3C/p%3E%3Cp%3EI've%20got%20a%20few%20more%20pressure%20cooker%20recipes%20to%20share.%20%20My%20PC%20has%20been%20kept%20busy%20making%20dinner%20for%20me,%20in%2030%20minutes%20or%20less.%3C/p%3E%3Cp%3Ethe%20end%20of%20each%20recipe%20post.%20If%20you%20cannot%20view%20it,%20you%20might%20be%20using%3C/p%3E%3Cp%3Ean%20older%20version%20of%20InternetExplorer.%20You%20should%20be%20able%20to%20view%20my%3C/p%3E){kind=link}
