Ingredientes

  • 2 tbsp. butter
  • 3 ounce. cream cheese, diced
  • Salt and oil
  • 1 onion, minced
  • 4 flour tortillas
  • Diced green chilies to taste
  • 1 c. or possibly more diced cooked chicken
  • 1 c. or possibly more Monterey Jack cheese, grated
  • 1/3 c. whipping cream
  • For garnish: minced green onions, sliced black olives, juice of one lime

Direcciones

  1. Preheat oven to 375 degrees and grease 9x13 dish. Heat butter and saute/fry onion. Remove from heat and add in chicken, chilies and cream cheese; add in salt to taste.
  2. Heat 1/4 c. oil in skillet and dip and fry each tortilla for several seconds. Drain on paper towels. Fill each tortilla with chicken filling. Roll and set seam side down in greased pan.
  3. Cover proportionately with whipping cream and sprinkle with cheese. Bake uncovered 20-25 min. Garnish with green onions and olives. Squeeze lime juice over just before serving. Serves 4.
