- Combine first 5 ingredients in container of an electric blender or possibly food processor. Process 20 seconds. With motor running, gradually add in extra virgin olive oil in a slow, steady stream. Add in yogurt (at room temperature) and process 5 seconds. Set aside.
- Combine rotini noodles and remaining ingredients; add in dressing and toss gently. Cover and chill. Yield: 4 servings (285 calories per 1 1/4 c. serving).
