Receta Creamy Vegan Mac and Cheese
A bowl of piping hot creamy mac and cheese is the perfect comfort food for just about any time of the year. Except for those that have food sensitivities. Chances are creamy mac and cheese will cause a person with food sensitivities more discomfort than comfort. This recipe is a dairy free, gluten free, vegan and did I mention delicious too? Even if you don’t have gluten or dairy sensitivities, this is a must try. It is just as satisfying and contains less salt and calories than the traditional version. You can satisfy your mac and cheese craving without guilt.
Creamy Vegan Mac and Cheese
INGREDIENTS
- 1 ½ cups gluten free elbow shaped pasta (made with rice or quinoa flour)
- 1 cup cashews
- ½ cup water
- 1 tablespoon of olive oil
- 1 ½ cups of chopped broccoli
- 1 red bell pepper finely chopped
- ½ cup chopped tomatoes
- 2 cloves of garlic chopped
- 1 teaspoon lemon juice
- ¼ cup nutritional yeast
- 1 teaspoon turmeric
- 1/8 to ¼ cup of whole wheat bread crumbs
- 1/8 cup of brown rice puffs - crushed
INSTRUCTIONS
Place cashews in a bowl and cover with water; let soak for at least 30 minutes
Cook the pasta according to package directions; drain and set aside in a bowl
Add oil to pan and heat, add garlic and broccoli, bell pepper and cook until they begin to soften. Sprinkle lemon juice over and add to the pasta
When cashews have completed their soaking process rinse them and place in a high speed blender or food processor
Process until they become a paste.
Gradually add the water until it reaches a smooth and creamy consistency similar to a thick cream sauce such as the cheese sauce in traditional mac and cheese
Add the cashew mixture to the pasta and broccoli - mix well, and add tomatoes
Stir in the nutritional yeast and add the turmeric
Turn mixture into an oven proof baking dish and sprinkle with crushed brown rice puffs if desired
Bake at 350 for 25 minutes or until top begins to brown
