Receta Creamy Vegetable Soup
Ingredients:
- Onion - 1, diced
- Carrots - 1/2 cup, diced
- Potatoes - 1/2 cup, diced
- Capsicum - 1/2 cup, finely chopped
- Vegetable Stock or Water - 5 to 6 cups
- Spinach - 3/4 cup, chopped
- Salt as per taste
- Milk - 2 cups
- Black Pepper Powder as per taste
- Oil - 3 tblsp
- Cornflour - 1 tsp (mixed with 1 tsp water)
Method:
1. Heat oil in a pan over medium flame.
2. Saute the vegetables until onions turns translucent.
3. Pour the stock and simmer for a minute.
4. Add salt, cornflour and pepper powder.
5. Simmer till the vegetables are tender and cooked.
6. Add milk and spinach leaves.
7. Gently boil for 3 to 5 minutes.
8. Pour into individual serving bowls and serve at once.
9. If desired, garnish with chopped coriander leaves.
10. If desired, you can add boiled noodles at the end.
