The crispy, burnt sugar is the best part of this easy and delicious Creme Brulee.

Today is a very special. Actually every day is special. But today is special because I am sharing a lower carb version of Creme Brulee. There is something special about cracking that burnt sugar every single person in this house loves.

Don’t let the name of this dessert trick you into thinking it’s complicated to create. There are only a few ingredients and even if you don’t have a brulee torch you can use your broiler. Make sure you watch it carefully so you don’t burn it.

This dessert was loved so much by the hubby that I made it two days in a row. Yes, its that easy to create.

My daughter made a statement that I thought was actually coming out of my mouth instead of hers. She said “If it doesn’t have chocolate in it that I’m not interested”. She didn’t like the creme brulee. But that’s okay. When I was her age I didn’t like it either and for the same reason. No chocolate!

2 cups heavy cream 4 egg yolks 1 teaspoon vanilla bean paste 2 Tablespoons Sweetener (I used SugarLeaf) ½ teaspoon of salt TOPPING 4 Tablespoons Sugar , divided

Heat the heavy cream in a sauce pan just enough to scald the cream but do not boil. In a separate bowl, whisk the yolks, vanilla, salt and sweetener Slowly pour the cream into the egg mixture Pour into your ramekins Set the ramekins in a water bath in a pan Bake at 300 degrees for 30 to 40 minutes. Cool to room temperature and then refrigerate until ready to serve. To serve, spread 1 Tablespoon of sugar evenly on the top of each ramekin and heat with a kitchen blowtorch until the sugar caramelizes evenly. Allow to sit at room temperature for a minute until the caramelized sugar hardens. While this is still high is carbs, the original version of creme brulee has 40 carbs per serving. 3.3.3077
