Ingredientes

  • Bowtie Pasta 6lbs
  • Olive Oil N/A
  • Onions, Spanish 2lbs Peel, Dice
  • Green Peppers, Bell 2lbs Wash, Peel, Dice
  • Scallions, Green 1lb Wash, Slice
  • Garlic, Fresh 1/2 cup Minced
  • Tomatoes, Dice #10cn 2gal
  • Chicken Broth 2qts
  • Corn, Frozen 1lb
  • Chicken Peas #10cn 1gal
  • Thyme, Fresh or Dry 1/2 cup
  • Bay Leafs 4 ech
  • Cayenne Pepper 1 Tbsp
  • Parsley, Fresh Garnish
  • Salt & Pepper To taste

Direcciones

  1. Bring some salted water to a boil, add the pasta nad cook until done, about 10 minutes or according to package directions
  2. In the tilt grill heat the olive oil
  3. Add the onions, bell peppers, and scallions, saute for 3 or 4 minutes or until tender
  4. Stir in the garlic and saute for a few seconds, them stir in the tomatoes, broth and corn and simmer 5 minutes
  5. Add chick peas, thyme, bay leaf and cayenne pepper and simmer
  6. Boil down to the thicken sauce, or conversely add more broth if you want it loose
  7. Remove bay leaf before serving
  8. Toss pasta in olive oil then Pan-up
  9. After pasta is panned-up top with sauce and fresh chopped parsley
