Ingredientes

  • 2 slc Bacon
  • 1 lrg Onion, sliced, Separated into rings
  • 1 med Green pepper, minced finely
  • 2 1/2 c. Minced fresh tomatoes
  • 1 sm Bay leaf
  • 2 c. Corn, cut from cob
  • 1/4 tsp Salt
  • 1/8 tsp Pepper

Direcciones

  1. Fry bacon till crisp. Remove from skillet, reserving drippings. Drain bacon & crumble. Add in onion & pepper to drippings in skillet. Cook over medium heat, stirring constantly, till crisp-tender. Add in tomatoes & bay leaf to onion mix. Simmer 10 min, stirring occasionally. Stir in corn & simmer 10 min. Discar bay leaf. Stir in salt, pepper & bacon.
  2. Yields 6-8 servings. (Great way to use up extra tomatoes & fresh corn.)
