Creole Spiced Pork Chops = dramatic but balanced flavors with little effort

Pull together thyme, cayenne, sweet paprika, red pepper flakes, black pepper & sea salt
combine the spices to create a rub
a splash of Worcestershire Sauce and a dried bay leaf will go into...
...beef stock to be addred later
you'll make a quick roux to finish and thicken the sauce and the garlic...
...will be minced and mixed with finely chopped parsley to top the chops
This dish calls for thick pork chops - nothing less than 1 inch will do - I like 'em even thicker for my guests
You only need to rub one side of each chop, then sear to brown the bottom of the chop first...
...when you shake the pan, and the chops move, they are browned. Now turn to sear the rub side
When you have seared the rub side, flip the chops and add the beef stock, Worcestershire and bay leaf
After the meat has poached for several minutes, remove to plate, rub side up, and sauce the dish. Garnish with the garlic / parsley and serve with a rice pilaf
