Receta Crepes
Sunday mornings are usually about three things. Sleeping in, getting ready for church, and a delicious breakfast. Strawberry crepes remind me of sweet Sunday mornings, and so last Sunday we had to... Enjoy!
Makes apprx. Six Crepes
Ingredients:
Crepe;
- 1/2 cup flour
- 1/2 cup milk
- 1/4 warm water
- 2 large eggs
- 2 tblsp melted butter
- 1 1/2 tblsp sugar
- dash of salt
- Filling;
- 1 cup water
- 1 tblsp powdered sugar
- 1 tbsp lemon juice
- 2 cups fresh strawberries washed, and stemmed
Mix all the ingredients in a blender and let it sit covered for about 30 minutes in the fridge. While sitting, in a saucepan add the filling ingredients and let boil for 2 minutes, then reduce to a simmer. Take batter and pour into the middle of a greased non-stick pan (smallest will work best) over medium heat. Pour about 1/4 cup at a time. Rotate the pan so that the dough spreads out thin and even over the bottom of the pan. Once solid, and golden on the bottom, flip. I used my fingers as it was easiest, but up to you. Let cook for another minute or so, and remove. Fill with the strawberry mixture. Top with a fresh strawberry and a sprinkle of powdered sugar.
Continue the process but be sure you eat one before they disappear, cause they will.
