%20%20%20I%20was%20inspired,%20sorta%20by%20a%20picture%20I%20saw%20in%20passing%20of%20a%20Crepe%20and%20I%20got%20that%20AHA!!!!!%20moment%20and%20then%20I%20breathed%20again.%3C/p%3E%3Cp%3EI%20made%20Crepes,%20two%20ways,%20and%20let%20me%20tell%20you,%20%20I%20had%20adventures%20in%20the%20kitchen,%20sigh.%20%20It%20really%20wasn't%20my%20day.%20%20But%20I%20persevered%20and%20got%20through%20it.%3C/p%3E%3Cp%3EFor%20starters%20I%20had%20spotted%20a%20box%20of%20Gluten%20Free%20pancake%20mix%20in%20the%20store%20last%20week,%20and%20decided%20to%20use%20them%20as%20a%20base%20for%20some%20crepes.%20%20%20I%20knew%20I%20had%20a%20couple%20of%20people%20coming%20who%20eat%20gluten%20free,%20and%20thought%20it%20would%20be%20nice%20to%20offer%20that%20to%20them.%20%20%20The%20mix%20I%20found%20is%20by%20Maple%20Grove%20Farms,%20and%20they%20are%20delicious,%20but%20they%20don't%20lend%20themselves%20to%20crepes%20very%20easily.%20%20%20They%20puff%20up%20way%20too%20much.%20%20%20%20%20As%20I%20said%20before%20I%20had%20adventures.%20%20%20I%20was%20trying%20to%20mix%20the%20egg%20and%3C/p%3E%3Cp%3Emilk%20together%20and%20decided%20to%20get%20out%20my%20little%20immersion%20blender%20and%20use%3C/p%3E%3Cp%3Ethe%20whisk%20attachment%20on%20it,%20well,%20the%20bowl%20was%20a%20little%20shallow%20and%20I%3C/p%3E%3Cp%3Eended%20up%20with%20a%20tidal%20wave%20of%20egg%20and%20milk%20all%20over%20the%20counter,%20the%3C/p%3E%3Cp%3Efloor,%20dripping%20down%20the%20cabinets%20and%20also%20on%20me.%20%20So,%20I%20ended%20up%20having%3C/p%3E%3Cp%3Eto%20add%20more%20of%20both%20to%20the%20mix.%20%20%20%20Got%20that%20cleaned%20up%20and%20then%20I%20discovered%20that%20the%20gluten%20free%20pancakes/crepes%20need%20to%20be%20cooked%20a%20little%20differently%20than%20regular%20pancakes.%20%20%20A%20lower%20heat%20and%20longer%20cooking%20time,%20otherwise%20they%20just%20burn%20and%20stick%20and%20make%20a%20heck%20of%20a%20mess.%20%20%20%20Oh%20well,%20they%20did%20taste%20good.%20%20%20%20Oh%20and%20did%20I%20mention,%20they%20puffed%20up%20really%20well?%3C/p%3E%3Cp%3EI%20also%20made%20standard%20crepes,%20the%20recipe%20is%20below,%20and%20they%20did%20turn%20out%20well.%20%20%20I've%20been%20making%20crepes%20this%20way%20for%20just%20about%20forever,%20and%20never%20had%20a%20fail%20yet.%20%20%20Because%20I%20don't%20put%20sugar%20in%20them,%20they%20are%20suitable%20for%20savoury%20fillings%20as%20well.%3C/p%3E%3Cp%3EBasic%20Crepes%3C/p%3E%3Cp%3E2%20eggs%3C/p%3E%3Cp%3E1/2%20cup%20milk%3C/p%3E%3Cp%3E1/2%20cup%20water%3C/p%3E%3Cp%3E1%20cup%20flour%3C/p%3E%3Cp%3E3%20tablespoons%20melted%20butter%3C/p%3E%3Cp%3EWhisk%20it%20all%20together%20and%20let%20sit%20for%20about%20ten%20minutes,%20then%20heat%20your%20pan%20and%20spray%20with%20some%20non%20stick%20spray.%20%20Pour%20about%201/4%20cup%20of%20batter%20into%20pan,%20and%20then%20pick%20up%20the%20pan%20and%20spread%20the%20batter%20out%20by%20tilting%20the%20pan%20and%20rotating%20it%20in%20a%20circular%20motion,%20making%20sure%20you%20don't%20tip%20it%20over.%3C/p%3E%3Cp%3EThis%20spreads%20out%20the%20very%20thin%20batter.%20%20Let%20cook%20for%20about%20a%20minute%20or%20so%20or%20until%20the%20top%20looks%20dry,%20then%20flip%20over%20and%20cook%20the%20other%20side.%20%20%20Remove%20the%20cooked%20crepe%20to%20a%20pan%20and%20continue%20until%20all%20the%20batter%20is%20used.%20%20%20I%20got%20about%20a%20dozen%20crepes%20I%20think%20out%20of%20this.%20%20%20I%20didn't%20want%20really%20big%20ones,%20cause,%20gee%20it%20is%20Tapas%20and%20it%20should%20be%20finger%20type%20food.%3C/p%3E%3Cp%3EMake%20the%20crepes,%20and%20either%20%20layer%20them%20on%20wax%20paper%20or%20just%20fold%20them%20into%20quarters%20right%20away,%20either%20way%20works.%20%20The%20reason%20for%20the%20wax%20paper,%20it%20keeps%20them%20from%20sticking%20to%20each%20other%20when%20you%20finally%20get%20ready%20to%20put%20them%20together.%20%20%20%20And%20Saturday,%20I%20had%20adventures%20in%20the%20kitchen.%20sigh.%3C/p%3E%3Cp%3EFilling%3C/p%3E%3Cp%3EI%20first%20came%20up%20with%20this%20filling%20some%20years%20ago.%20%20%20It%20tastes%20rich%20and%20decadent%20and%20wonderful,%20but%20really%20isn't%20that%20fattening.%20%20And%20it's%20kinda%20good%20for%20you%20as%20well.%3C/p%3E%3Cp%3EWhisk%20it%20all%20together%20and%20then%20fold%20in%20one%20can%20(%20%20mandarin%20oranges%20or%20fresh%20orange%20sections%20would%20be%20awesome%20as%20well.%20%20%20Reserve%20a%20couple%20of%20pieces%20for%20decorations.%20%20%20Garnish%20with%20fresh%20mint%20leaves.%3C/p%3E%3Cp%3EServe%20with%20a%20spoon%20so%20your%20guests%20can%20just%20put%20it%20together%20however%20they%20wish.%20%20%20This%20is%20yummy.%3C/p%3E%3Cp%3EI%20also%20made%20Chicken%20Picatta,%20but%20made%20it%20into%20small%20bite%20size%20pieces.%20%20%20%20And%20there%20I%20had%20adventures%20as%20well.%3C/p%3E%3Cp%3EI%20was%20being%20so%20careful,%20I%20didn't%20want%20a%20mess,%20just%20wanted%20to%20saute%20the%20chicken%20in%20pieces,%20put%20them%20aside,%20make%20the%20sauce%20and%20serve%20it.%20%20%20So,%20I%20put%20the%20seasoned%20flour%20in%20a%20ziploc%20bag,%20shook%20the%20chicken%20breast%20pieces%20to%20coat%20them%20and%20proceeded%20to%20saute%20them%20in%20small%20batches%20in%20some%20butter%20and%20olive%20oil.%20%20%20Well,%20wouldn't%20you%20just%20know%20it,%20I%20put%20the%20bag,%20the%20plastic%20bag,%20full%20of%20flour%20and%20a%20couple%20of%20chicken%20pieces%20right%20on%20top%20of%20a%20hot%20burner,%20and%20proceeded%20to%20get%20flour%20all%20over%20my%20newly%20cleaned%20stove,%20the%20just%20washed%20floor%20and%20myself.%20%20%20Cause%20my%20first%20response%20was%20to%20jerk%20the%20bag%20off%20of%20the%20burner%20and%20of%20course%20it%20was%20TOO%20LATE!!!%20%20it%20had%20melted%20already.%20%20%20%20Luckily%20for%20me,%20I%20only%20had%20a%20couple%20pieces%20of%20chicken%20in%20the%20bag,%20but%20there%20was%20more%20than%20enough%20flour.%20%20%20Did%20you%20know%20that%20flour%20seems%20to%20expand%20exponentially%20when%20it%20hits%20the%20air%20and%20stove%20top%20and%20floor?%20%20%20%20By%20the%20time%20I%20got%20that%20mess%20sorted%20out,%20I'd%20managed%20to%20scorch%20the%20couple%20of%20pieces%20of%20chicken%20in%20the%20pan.%20%20%20Which%20my%20dog%20was%20very%20grateful%20for,%20cause%20she%20got%20to%20eat%20them.%20%20%20But%20I%20got%20the%20mess%20cleaned%20up,%20and%20it%20all%20worked%20out.%3C/p%3E%3Cp%3EIt%20did%20leave%20me%20wondering%20if%20maybe%20someone%20had%20set%20up%20a%20Candid%20Camera%20somewhere%20in%20the%20kitchen%20and%20then%20proceeded%20to%20sabotage%20stuff.%20%20%20Oh,%20well,%20if%20you%20can't%20have%20the%20occasional%20adventure,%20life%20just%20gets%20dull.%3C/p%3E%3Cp%3ESo%20there%20you%20have%20my%20latest%20adventures,%20sigh.%3C/p%3E){kind=link}
