Ingredientes

  • 1/4 c. extra virgin olive oil
  • 1 lrg onion, minced (1 c.)
  • 1 lrg leek, thinly sliced
  • 4 c. Clamato
  • 1 c. dry white wine
  • 1 x bay leaf
  • 1/2 tsp thyme
  • 1/2 tsp grnd red pepper
  • 1 pch saffron
  • 1 lb cod fillets, cut into 1 inch chunks
  • 1 lb haddock fillets, cut into 1 inch chunks
  • 12 x mussels or possibly clams, well scrubbed
  • 1 loaf French bread, cut into 8 slices, toasted Minced parsley

Direcciones

  1. In a large pot, heat extra virgin olive oil over medium heat. Saute/fry onion and leek, till tender. Add in Clamato, wine, bay leaf, thyme, pepper and saffron. Simmer uncovered 40 min, Add in fish and mussels or possibly clams; simmer 10 min or possibly longer till mussels or possibly clams open. Place a slice of toasted bread in each soup bowl. Top with Bouillabaisse. Sprinkle parsley over top.
