Crisp Potato and Bacon Casserole

Ingredientes

  • 50 lbs boiling potatoes (about 100)
  • 3 cups olive oil
  • 2 1/2 cups finely chopped fresh rosemary
  • 1 cup salt
  • 1 cup pepper
  • 12 lbs bacon cut into 1 inch pieces

Direcciones

  1. Put oven rack in middle posiition and preheat oven to 450 F.
  2. Peel potatoes and cut into 3/4" cubes.
  3. Transfer potatoes into a 2 1/2 quart shallow paking dish and toss with oil, rosemary, salt, and pepper.
  4. Arrange potatoes in 1 layer and scatter bacon on top.
  5. Bake until bacon is scrisp and potatoes are cooked through and golden around the edges - about 35 minutes.
  6. Loosen potatoes with a metal spatula before removing from dish.
