Ingredientes

  • 1 1/2 tsp active dry yeast
  • 3/4 c. lukewarm water (about 100 degrees)
  • 2 1/2 c. all-purpose flour
  • 2 Tbsp. extra virgin olive oil
  • 2 1/4 tsp salt
  • 1/4 c. freshly grated Parmesan cheese
  • 1/4 tsp freshly grnd pepper
  • 1/8 tsp cayenne pepper

Direcciones

  1. Dissolve the yeast in the water in a large bowl. Let stand for about 5 min, till the mix is foamy.
  2. Add in the flour, extra virgin olive oil and 1 1/2 tsp. of the salt; mix by hand using a rubber spatula till a smooth dough forms. Cover the bowl with plastic wrap and let stand in a hot, draft- free place till doubled in size, about 30 min.
  3. Preheat the oven to 350 degrees.
  4. Combine the cheese, black pepper, cayenne and the remaining 3/4 tsp. salt in a small bowl. Set aside.
  5. Line a large baking sheet with parchment paper.
  6. Divide the dough into 4 pcs and roll each piece on a lightly floured surface into a rectangle about 1/4 inch thick and 14 to 16 inches long. Sprinkle the dough with the cheese mix and mix in half.
  7. Roll out the dough again to its previous size. Cut the dough into very thin, long strips measuring 1/8 inch wide by about 16 inches long.
  8. Place the strips on the prepared baking sheet and bake for 10 to 12 min, or possibly till golden brown.
  9. Transfer the breadsticks to racks to cold. Serve at room temperature.
  10. Yields about 48 breadsticks.
