Receta Crispy Eggplant Sandwich
Ingredients
For eggplant fry
1 Medium sized
- Eggplant, thinly sliced
- ~1/4 cup Gram Flour (1)
- 2 Tbsp Vegetable Masala (2)
- Salt for taste
- Oil For frying
- For the Sandwich
- 1 Tomatoes, thinly sliced
- 1 Cucumbers, thinly sliced
- Scallions, finely chopped
- Lime wedges (optional)
Instructions
Mix gram flour, salt and Masala. Coat the masala mix on each side of the eggplant and pan fry it. Keep them on a paper towel to remove excess oil. Also before frying each batch, clean the pan with a paper towel to clean any leftover small crusts and then add oil. It might spoil the texture of the eggplants.
For the sandwich, in between two eggplant slices, keep a tomato, 2 or 3 slices cucumber and some scallions.
Serve it with a ketchup or any dip.
