This paneer fry was not purposefully cooked to post on blog, I was craving for some crispy fried snack one evening and made these to satisfy myself with a warm cup of chai. After tasting a few I was so determined to post it as it was so good to be shared. You can serve it as finger food, appetizers along with mocktails or drinks or even with your evening tea. The outer coat was crispy and the inside was super soft with subtle flavors. You can try the same with tofu and also any other ingredients of your choice. You can try with fish, chicken, mushrooms and even mixed vegetables too, also try adding some more flavors, play with spices and customize this recipe as you wish. As I did not intentionally cook this one for blog, I did not click any step wise pictures. But I will be making this very often and when I do, I'll make sure to click the procedure and upload it here. You can find my clicks without much styling, well some of them are out focus too and the reason for that, you will find at the end of this post! (wink :D )

INGREDIENTS

Serves one person

Total Preparation Time - 6 to 10 minutes

Paneer - 10 long pieces

PREPARATION METHOD

I used store bought paneer, you can use homemade too. Gently wash paneer in water and just chop them into 10 medium sized cubes or longer pieces and set them aside.

Prepare batter - Mix all the ingredients mentioned under "For the batter" and pour some water to make a slightly thick batter. You should be able to coat the paneer pieces well. See that it is not very watery.

Now mix the ingredients mentioned below "for the coating" and set aside. Do not add water just make a dry mix and set aside.

Then dip the paneer cubes in batter and put them in the dry mixture we have prepared as coating. Gently roll the pieces or shake the bowl or toss so that the flour sticks to the paneer pieces and covers it well. Set aside.

Place a pan on flame and pour enough oil to deep fry the paneer pieces. You can also shallow fry them. Wait until the oil heats up. (do not wait until it turns smoky hot)

Then gently slide the paneer pieces into the hot oil and fry on a medium flame until it turns golden and crisp. Do not fry paneer too long as it might turn rubbery.

Remove from flame using a slotted spoon. (do not place on tissue paper as the pieces will turn soggy soon, I've used a tissue for photographic purpose)

Serve hot with ketchup.
