Crispy Potato Chip Fish

Ingredientes

  • 1 (1 lb.) pkg. frzn cod or possibly haddock fillets, use 3/4 pound to serve 2 people
  • 1/2 c. evaporated lowfat milk
  • 1 teaspoon lime juice
  • 1/2 teaspoon salt
  • 1 c. crushed potato chips, Ruffles
  • 1 egg
  • 1-2 tbsp. butter

Direcciones

  1. Allow frzn fish to stand at room temperature 15 min. Cut fish into 3-4 equal portions. Combine lowfat milk, egg, lime juice, and salt. Dip fish in lowfat milk mix; roll in crushed potato chips to coat. Place on greased shallow pan; dot with butter and sprinkle top with paprika. Bake in 400 degree oven till fish flakes, about 25-30 min. If using fresh cod, don't bake quite as long.
