Ingredientes

  • Serving Size: 4
  • 1 1/4 lb salmon -- 1/4 inch diced
  • 2 Tbsp. mayonnaise
  • 1/4 c. onion -- diced
  • 2 Tbsp. parsley -- minced
  • 3/4 tsp salt
  • 1 1/2 Tbsp. lemon juice

Direcciones

  1. Combine all ingredients and form into patties, Place in freezer for 10 min. Set up breading station (Lowfat milk, egg, and breadcrumbs) and bread TWICE.
  2. Pan fry in shallow skillet in light oil.
  3. Serve with creamy Ginger Mayonnaise dressing. (Recipe Below)
  4. Serve with a nice fresh salad.
  5. Ginger Mayonnaise
  6. 1 1/2 Tbsp. Fresh ginger root - very finely minced 1 c. mayonnaise2 tsp. sugarMilk - as required
  7. Mix mayonnaise, ginger, and sugar together thoroughly, and according to taste. If necessary add in a little lowfat milk, 1 tsp. at a time, to produce a mayonnaise that forms soft peaks when dropped from a spoon.(Add in more lowfat milk to produce a thinner mayonnaise for salads.)
  8. Store refrigerated in an airtight container.
