  • salmon, skin sea salt extra virgin olive oil

  1. Preheat the oven to 250 degrees Fahrenheit.
  2. Brush the salmon skin with extra virgin olive oil and sprinkle it with sea salt. Sandwich the skin between two silpat or possibly non-stick cookie trays, weighted down with a couple of bricks or possibly ovenproof kitchen weights. Bake for approximately 1 hour and 45 min before removing the top silpat to crisp the fish skin.
  3. Use to decorate any fish dish.
  4. Preparation time is 2 hrs 20 min.
